This is possibly the best ever chocolate cake recipe! Whenever I bake this, people ask me for the recipe. It is so simple and easy to make - one of those all too easy recipes that you throw all the ingredients into the bowl, let it mix and then bake. ...and then lap up the accolades, as people think you are a marvellous cook when in reality you've been lazing around and reading blogs!
This is my absolute staple recipe for school cake stalls, birthday parties or quick afternoon teas. It's super easy and a really nice chocolate cake - not too heavy like a mud cake. I can assure you that both adults and kids will love it.
My friend, Jane, gave me this recipe so in our house we call it :"Jane's Chocolate Cake". We're very inventive like that!
Jane's Easy Chocolate Cake Recipe
Ingredients
3oz (85g) butter
1 cup sugar
2 tablespoon of cocoa
1/2 cup milk
1 cup Self Raising flour
2 eggs
Vanilla extract (or essence)
1 cup sugar

(N.B. in Australia our cup measure size is 250ml, I think the US is different)
Method:
- Place flour, sugar, cocoa, milk, vanilla essence & eggs into mixer bowl.
- Melt butter and pour over ingredients.
- Beat well for 4 minutes (the mixture will turn a much lighter colour).
- Pour mixture into greased cake tin and bake for 45 mins in moderate oven.
- Let the cake cool for 5 mins in the tin then cool on a wire rack.

love the rosette icing Fiona! My no-fail choc cake recipe which i have used for years, I got off a lady I used to work with named Kerry. So yep, in my recipe book, it is Kerry's Chocolate Cake, lol! Mine is based around a coffee mug - 1 mug sugar one mug sr flour, break two eggs into mug then fill with milk, add melted butter to the mix, think it is 125g, plus 2T cocoa and that's it. Must try yours though! In fact just re-read your recipe again, they are very similar, just more butter in mine. Yours must have less calories which is a bonus!
